Spicy Sweet Potato Fries With Spicy Chilli Mayo
3 large sweet potatoes, peeled
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Large pinch sea salt
3 tablespoons coconut oil
1 tablespoon brown sugar or coconut sugar (optional)
Spicy Chilli Mayo, for serving
Preheat oven to 220 degrees.
Cut sweet potatoes into strips and place on preheated baking tray lines with grease-proof paper.
Mix cumin, cayenne pepper, salt, coconut oil and sugar in a bowl. Once mixed coat the sweet potato strips, dont be afraid to get messy, use your hands (washing first) to get a really good covering.
Roast for 25 minutes, turning half way. Serve with Spicy Chilli Mayo on the side.
