Wild Irish Sea Veg Kombu is hand harvested and air dried from the roaring Atlantic Ocean at the lower point of the Co. Clare coastline by Gerard and Eileen Talty.  One of the most important seaweeds in Japanese cuisine, Kombu is versatile and delicious and is rich in umami – the fifth human taste which subtly enhances other ingredients the Kombu plant is large and is securely attached to rocks, sustainably harvested during low spring tides all year round.
