What is Bone Broth?

 

The answer in it's simplest form is that Bone Broth is the liquid result of brewing bones and connective tissue.  Bone Broth is made by simmering bones in water and vinegar, the technique used to cook Bone Broth helps release the nutrients from the marrow in the bone into the water and vinegar combination to produce a nutritious Bone Broth.  

 

Stocks and Broths played a large role in the culinary traditions of many cultures throughout the world. But what is the difference between stocks, broths and bone broth? Or is Bone Broth and Stock the same? Although many people think that stocks, broths and bone broths are interchangable and all based on the same foundations, there are differences.

 

Stock

Stock is normally made with bones and can contain a small amount of meat, normally the amount of meat in stock is just what is attached to the bone.  Before making stock some people roast the bones before simmering to increase flavour, stock is left to simmer for 3-4 hours.

 

Broth

Broth unlile stock is intentionally made with meat, unlike stock it contains a small amount of bones.  Broth is not cooked as long as stock and can be done in just 45 minutes - 2 hours.  Broth is lighter in flavour and texture than stock.

 

Bone Broth

Bone Broth is made by first roasting the bones to increase flavour and then simmering for long periods of time.  The time usually required for making Bone Broth is normally from 24 - 72 hours.  The purpose of Bone Broth is to extract as many components os the bone as possible from gelatin to minerals.
